Italian Green Beans

Green Beans Ingredients and Finished Product

Ingredients

1 ounce olive oil

1 pound of fresh green beans

2 diced tomatoes

Salt and pepper to taste

½ teaspoon of Italian seasoning

1/8 teaspoon garlic

Directions

Cut green beans in thirds and steam until tender.

Put olive oil and tomatoes in a pan and sauté for two minutes.

Ap: salt, pepper, Italian seasoning, and garlic

Stir until well mixed, ap green beans, toss and serve.

Super Smoothie

Ingredients for Smoothie

Ingredients

1 banana

1 can of pineaple and the juice

About 5 large strawberries

1 handful of spinach

Directions:

Put all ingredients in a blender and blend until smooth. Keep in freezer for 45 minutes before serving.

Ratatouille

2 Tablespoons olive oil
¼ cup diced onion1
½ cups diced tomatoes
2 cups diced zucchini
2 cups diced yellow squash
2 Tablespoons chopped fresh basil
1/8 teaspoon granulated garlic
Salt and pepper to taste

Directions

Sautee onion in olive oil for about 2 minutes.

Ap tomatoes and seasonings and cook for about 4 minutes.

Toss in zucchini and yellow squash, cook about 2 minutes until squash is just starting to get soft.

Serve.

Pico De Gallo

Pico De Gallo Ingredients and Finished Product

Ingredients

3 tomatoes diced

½ cup diced onion

¼ cup finely chopped fresh Cilantro

Juice from ½ of a lime

¼ teaspoon of cumin

½ teaspoon salt

¼ teaspoon black pepper

Directions

Stir all ingredients together. Best if prepared at least an hour before serving.

Sweet Potato Fries

Ingredients

2 medium sweet potatoes
1/4 cup olive oil
2 tsp of sea salt
1 tsp cayenne powder
2 tsp of thyme

Directions

Preheat over to 450 degrees. Spray cookie sheet with non stick spray or aluminum foil.

Wash sweet potatoes well. Cut both ends off and then cut into long fry shape pieces. Put your fries in a large bowl and combine all ingredients. Toss together to coat well.

Bake for 15 minutes then flip the fries and bake for another 15 minutes.

Hummus

Hummus

Ingredients

1 can of chickpeas

1/3 cup of olive oil

2 tablespoons of tahini (optional)

1 tablespoon of garlic powder

Salt and pepper to taste

Directions

Rinse and drain the chickpeas until they no longer have bubbles. Ap all the ingredients in a blender or food processor. Blend until smooth. You may need to ap more olive oil to achieve desired consistency. Ap different flavors to make it your own!
